Labor Day

Labor Day marks the last hoorah of the summer and the beginning of fall season, when vacations end, people come back to work and kids are back in school. It’s not just the end of the summer season but the beginning of cooling weather and also a shift in how and what we eat. We go from wanting cold, lighter foods to gradually wanting warmer, more comfort foods. So although this weekend we may see potato salad, maybe even French fries on the table, baked potatoes and mashed potatoes are on the horizon. Believe it or not mashed potatoes actually make a great substitute for cream and butter in pureed soups even sauces, for that rich texture without the fat. Potatoes are also packed with antioxidants, amounts and types depending on the variety of the potato, but predominantly carotenoids and anthocyanins. So eat up!
