It’s officially spring! April brings green grass, flowers, and warmer weather. It’s definitely an exciting time, and there are also some sweet and tasty national holidays to look forward to as the month begins.  
April 5th is National Caramel Day. Americans had been using sugary syrup since the 1600’s when, in 1950, it was discovered that adding a source of fat—typically milk—created a soft, chewy candy. This candy became very popular and has been used as a topping and flavoring ever since. 
Caramel is made with butter, sugar, milk or cream, and vanilla. The longer it cooks, the deeper the color and the darker the flavor. There are many different ways you can enjoy caramel: as an ice cream topping, added to coffee, included in popcorn, or simply all on its own. It goes well with sea salt and chocolate—something you can try for yourself with the Salted Caramel Trio, a delightful treat of chocolate-dipped, handcrafted vanilla marshmallows that are topped with sea salt and drizzled caramel. 
While you treat yourself to some sweet and buttery caramel this week, you can celebrate National Find A Rainbow Day too, which falls on April 4th. Spring, with its sunlight and warm weather, reminds us to remain hopeful and remember there’s always a rainbow at the end of the storm. The first week of April is all about the little things in life—and a small caramel treat is a great way to celebrate this.
