Celebrate Cinco de Mayo   Cinco de Mayo is next Monday and we know there are many who like to celebrate. Cinco de Mayo should not be confused with Mexico’s Independence Day which is celebrated on September 16^th. In fact, Cinco de Mayo is actually in celebration of an unlikely victorious outcome in the Battle of Puebla that happened on May 5, 1862.   The French had apparently invaded to collect on a debt. There were many more soldiers and they were better trained with better weapons but despite this, the town of Puebla stood their ground and won an unlikely victory.   So celebrate all of those unlikely victories on Cinco de Mayo and have a feast!     Recipes to celebrate Cinco de Mayo   Today in the U.S., much of Cinco de Mayo celebrates delicious Mexican food. Try these yummy Cinco de Mayo recipe ideas and enjoy!   Make Guacamole: Guacamole is the quintessential addition to any plate. It is so simple to make – don’t think you have to wait to dine out to enjoy this treat.   Purchase ripe avocados and mash until smooth.   Add minced garlic, salt, and a pinch of lemon juice.   Serve with chips or on the side of the main entrée.     Chicken Flautas   Yum, yum, yum!
