Spring is officially here! Whether or not the weather agrees, the first day of spring was March 20th. There’s a lot to love about the change in season: opening windows, clearing away the winter dust, and cooking your favorite spring recipes with the freshest ingredients! Now is a great time to hit up your local farmer’s market or even to start your own garden so you can have fresh fruits and veggies right in your backyard.
If you’re sick of heavy winter meals and want some light spring fare, here are some ideas as you plan your meals for the week.
For Starters:
In-season vegetables are a must for the spring! Steamed whole artichokes have a pleasant nutty flavor and work well as side dish. Get creative with your asparagus appetizer by wrapping it in prosciutto for a sophisticated twist. If it’s still chilly outside, you can also make a spring vegetable soup that brings out the vibrancy of seasonal veggies and soothes the soul!
For the Main Course:
Fresh seafood makes a light and delicious meal during the springtime. Grill up some halibut or salmon for the makings of a fantastic meal. A spring chicken also makes a perfect centerpiece for the season. If you’re going meatless, then how about a spinach quiche?
For Dessert:
All your favorite desserts, like cookies and brownies, taste just as good in the springtime—but if you want to capitalize on all the fresh fruits available, then bake a pie! Strawberry rhubarb pie is a sweet, classic springtime dessert. Or whip up something light like a lemon meringue pie.
