Don’t look now, but Easter is sneaking up quickly. Stuffed bunnies and colored eggs are beginning to adorn windowsills and desks, and refreshing, jovial colors are as common as delicious treats.

Easter is an important religious holiday, but it’s also a symbol of spring. It’s the time when we finally admit that we’re ready for the cold, dark winter to be over, and the bright, warm, happy months to begin. At Easter, we wear bright colors, watch children look for eggs in the grass, and celebrate all kinds of plants and animals that symbolize the vitality of life.

Of course, there’s no better way to ring in spring than with food. While the kids bury their faces in candy eggs, we recommend foods that celebrate life – that’s what this holiday is all about.
